EWING — Ashley Jackson, 15, of Scotch Plains had the honor of lighting the Cauldron to officially open the Special Olympics New Jersey 2012 Summer Games on June 8 at the College of New Jersey in Ewing. Over 2,400 athletes from across the state competed in seven sports, including Jackson’s sport of track & field. She took home the Gold in the 100M Dash.
